What dietary cholesterol?

The liver produces about 80% of the cholesterol in the body. The other 20% comes from the foods consumed. Foods that do the most to increase blood cholesterol are saturated fats and trans fat content in foods such as fatty meats and whole dairy products, snacks and some prepared foods. Foods that contain high amounts of dietary cholesterol are egg yolks, guts,, shrimp, squid and fatty meats.

Dietary cholesterol has no effect in some people. From a nutritional point of view, the best way to control blood cholesterol is to eat a healthy diet low in fat, especially saturated fat and trans fat. Studies show that among healthy people with no history of heart disease, diabetes or high cholesterol, consuming an average of one egg per day (or seven eggs per week) does not increase the risk of heart disease in the long term.
